Vegan Avocado&Zucchini Chocolate Cake
This Avocado & Zucchini Chocolate Cake tho❤️So incredibly yummy, moist (I hate that word but there is no other way to describe it), totally vegan AND I used one whole zucchini up! ? two actually because I did a second batch as mini loaves, left out the melted chocolate topping and now have the kids breakfasts done for this week!!!
•preheat oven to 350
•grate 1 medium zucchini and peel and pit 1 avocado into mixer and start mixing on low
•slowly add in:
3 C flour (I used organic baking four)
1 C coconut sugar
1/4C olive oil (I used @evoolution104 Walnut)
1/3C white vinegar (I used @evoolution104 Coconut)
tsp each baking powder and soda
sprinkle of salt
6 tbsp dark organic cacao powder
touch of vanilla
•At this point you can either divide your mixture between two small, round, greased cake pans OR pour into lined muffin tins. Either way bake for approx 35-45 min or until a toothpick comes out clean.
For the cake option I melted vegan dark, fair-trade chocolate between the two and on top. DELICIOUS!!!
