Vegan Pumpkin Apple Cobbler?
This dessert is what fall is all about?and was a total hit at Thanksgiving Dinner?Even my anti-vegan Dad was impressed…it is THAT GOOD ?!
•combine 2 1/2 C flour, 1 C coconut sugar, few tsps each baking powder and soda, pinch of salt and cinnamon and pumpkin pie spice to taste (I use a savage amount?) and mix.
•in a separate bowl mix 1 heaping C pumpkin purée, tsp of vanilla, 1/2 C plain almond milk and 1/2 C of melted butter flavour coconut oil.
•add wet ingredients to dry and mix really well then spread mixture out evenly in a baking dish (I used foil pans as I was bringing these to dinners) and set aside.
•chop 4 small baking apples in to chunks and press down in to the mixture making sure they are covered with batter
•in a separate bowl combine 1/2 C organic brown sugar, 1/2 C organic quick oats, as many chopped pecans and walnuts as you like and more pumpkin pie spice, then pour this mixture over pan mixture and evenly spread out on top.
•add 1 1/2 C hot water over everything and bake at 350 for approx 1 hour.
•top with vegan coconut ice cream and serve.
Seriously so delicious I can’t even handle it. In fact after the first I went on to make 6 batches! Truth lol??
