Quick and Easy Vegan Doughnuts
Some girls get excited about receiving jewelry for Christmas and some get excited about doughnut pans…I am the latter? OMG these are vegan and GF and most of all….they are so good! Plus they count as healthy cuz I topped them with organic cacao, goji berries and blueberries right??! Whatevs cuz I’m still on holiday eating mode over here lol.
Doughnut pan (shown above)
All Purpose Flour 1¼ C
Salt ¼ tsp
Baking Soda 1 tsp
Vanilla Almond Milk ½ C
Coconut Sugar 1/4 C
Melted Coconut Oil 4 tsp
Almond Extract 1 tsp
Flax egg = Hot Water 3 Tablespoons and 1 tbsp Flax meal mixed and left to stand about 10 min or until a paste forms. If you use eggs the equivalent is one large egg.

Get flax egg ready
Combine the almond milk, melted coconut oil, almond extract, coconut sugar and flax egg and whisk smooth with a hand mixer.
Add flour, salt & baking soda and mix until smooth.
Spoon batter half way to the top into each of the greased doughnut pan holes.
Bake in a preheated 325 F oven for approx 25 min or when they are browned and spring back when gently pressed.
Once completely cooled you can ice them although they taste really good just plain too!
2 C icing sugar (ensure without bone char)
2 tbsp vanilla almond milk
2 tsp almond extract
1/4 C melted coconut oil
Blend all ingredients together with a hand processor and spread over doughnuts or any baking. Use whatever else you want to top…I used goji berries, blueberries and cacao.
