This is one of my absolute fav versions of rice to make…and eat!!!
•Prepare 4 C preferred rice as usual (*I use white..nutritional explanation below)
• In a large sauce pan combine 3 C diced tomatoes, 1 C diced celery, diced purple onion and handful of spinach and sauté in 2 tsp olive oil (I used cilantro onion and truffle)
•once soft continue to sauté and add:dried basil,cumin, curry powder, a touch of harissa and S&P
•continue to cook and add bell peppers, cilantro (optional) and 1 can drained organic Chickpeas
•add rice to mixture and that is it!
