5min/no-bake Healthy Cookie Dough Balls
After forcing my kids to eat eggplant the other night I felt it necessary to make it up to them with some healthy deliciousness.
I have to give credit where it’s due. My kids are amazing when it comes to trying foods. They have grown up taking chickpea salads, hemp balls and lettuce wraps to school for lunch while their friends “get” pizza pops and microwave KD. They’ve never even asked me to take them to McDonalds and have literally never even made a face when I’ve asked them to try new foods (this applies to their over 3 yrs old life…prior to that I would spend my dinners watching them chew a piece of broccoli for 2hrs). When we were in Thailand my family couldn’t believe how open they were to trying everything and their manners when they tried, yet didn’t care for the food.
At home they are a little more honest and though they will always try, will also openly tell me when something I’ve made is “gross” or “disgusting.” You should take comfort in knowing that any recipe I share with you has been kid tested prior to my posting it.
These no bake balls got the “amazing” rating and that says quite a bit since the only way my daughter likes chickpeas is in hummus form (I should probably get some genetic testing done because I’m not sure how any child I’ve grown inside me could not care for chickpeas considering I eat them straight from the can. Daily. But whatever). On top of being delicious, they literally take minutes to make and are packed with protein and nutrients.
1 can rinsed and drained chickpeas (save that aquafaba to make pancakes, recipe HERE)
Don’t worry about the chickpea skins. I’m not sure who has the time or patience to remove those but I never do.
1/2 C almond or cashew butter
1/3 C chia seeds
1/3 C shredded coconut (optional)
1/3 C vegan chocolate chips/cacao nibs (optional but I highly recommend putting some type of chocolate in there)
And approx 1/4 cup of syrup….
I personally love this brand for their lower glycemic index AND dedication to the environment (read more HERE) but I’m pretty sure substituting maple or rice syrup would yield the same results as mine if that’s what you have.
Mix everything except the chocolate chips in your food processor on low for about a minute or until mixture resembles cookie dough. Fold in chocolate chips. Then use a spoon to scoop and roll into balls.
Bet you can’t just eat one…..
