10 minute/4 ingredient Cauliflower Soup
Truly. All it takes is 10 min of prep work to get this soup in your Slow Cooker and have a meal ready when you get home for supper.
And….your kids won’t even know they are eating a mass quantity of cauliflower. And….it tastes incredible in addition to being filling enough to not need any side dishes to serve with it.
And….this is all you need to do:
Slow cooker on high for 6 hrs OR low for 8hrs.
2 heads chopped cauliflower
8 large peeled potatoes
1 large chopped white onion
1 box organic veggie broth
I used “sacred salt” and pepper and a touch of Italian seasoning
Put everything above in your Slow Cooker, cover and forget about it?
After it’s been in there for your choice of time use a hand mixer to purée and you are done!!!
Top with fresh dill and more seasoning to taste.
Warning….. your house will stink like cauliflower. But it’s so worth it?
